Squishy Marshmallow Candy Shapes (Starch Mogul Method)
Soft, jiggly, toy-like marshmallow candies molded into any shape you want — whale, starfish, dolphin, giraffe, octopus — using the viral starch mogul method. Same base recipe, endless shapes, endlessly fun.

Ingredients

Marshmallow Base:

  • 20 g (2½ tablespoons) powdered unflavored gelatin
  • 100 ml (⅓ cup + 1 tablespoon) cold water — for blooming gelatin
  • 100 ml (⅓ cup + 1 tablespoon) water — for the syrup
  • 400 g (2 cups) granulated sugar
  • 1 teaspoon vanilla paste
  • Gel food coloring of your choice

Starch Bed & Finishing Dust:

  • 100 g (¾ cup) cornstarch
  • 100 g (¾ cup) powdered sugar

For Eyes & Details:

  • Small amounts of white and black fondant, OR pre-made candy eyes, OR melted white and dark chocolate
  • Contrasting gel food coloring for spots, stripes, or mane details

 

Instructions

  1. Mix the cornstarch and powdered sugar together in a wide deep plate. Smooth the surface flat. Press your chosen cookie cutter firmly into the starch bed to create a clean shaped impression. Use a soft brush to sweep the impression clean inside, paying attention to all corners and points. Set the tray aside.
  2. Sprinkle the gelatin powder over 100 ml of cold water in a large heatproof mixing bowl. Do not stir. Leave to bloom for 10 minutes until fully absorbed and spongy.
  3. Combine the remaining 100 ml of water with the 400 g of sugar in a small saucepan. Bring to a boil over medium heat without stirring, then reduce to low and simmer steadily for 10 minutes. Remove from heat immediately.
  4. Pour the hot syrup slowly into the bloomed gelatin. Add the vanilla paste and your chosen gel food coloring. Blend on the highest speed for a full 10 minutes until the mixture is thick, glossy, fluffy, and holds its shape — it should look like a shiny pourable cloud.
  5. Transfer immediately to a piping bag. Pipe into each shaped impression, filling slightly above the surface to create a gentle dome. Work quickly.
  6. While the base is still completely wet, add eye details — white dot first, black pupil on top. Add any additional detail colors for spots, stripes, or mane details immediately after.
  7. Use a soft brush or fine mesh sieve to gently dust the cornstarch mixture over each filled shape until completely covered. Refrigerate for a minimum of 3 hours or overnight.
  8. Lift the cookie cutter straight up to reveal the finished candy. Ease it out of the starch nest gently. Brush off all cornstarch dust with a clean soft brush until the surface is completely clean and smooth.

 

Notes

  • The cornstarch mixture is not an ingredient — brush it all off completely before serving.
  • Work in a cool kitchen — heat makes the mixture set too fast.
  • Same base recipe works for every shape — only the cutter and color change.
  • Store in an airtight container at room temperature with parchment between layers for up to 3–5 days. Do not refrigerate after unmolding.
