  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour (or rice flour for gluten-free)
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 cups strawberries, diced

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (180°C). Grease an 8 or 9-inch square baking pan or line with foil/parchment paper. In a medium bowl, mix 1/2 cup melted butter, 1/4 cup sugar, 1 1/2 cups flour, and a pinch of salt until crumbly. Press evenly into the pan’s bottom. Bake for 10-12 minutes until lightly golden. Cool slightly.
  2. Make the Filling: In a large bowl, whisk 3 eggs, 1/4 cup sour cream, 1 cup sugar, and 2 tablespoons flour until smooth. Stir in 1/2 cup lemon juice and 1 tablespoon lemon zest. Gently fold in 2 cups diced strawberries.
  3. Assemble and Bake: Pour filling over the crust, spreading evenly. Bake for 25-35 minutes until set but slightly jiggly in the center. Check at 20 minutes; baking may take up to 45 minutes depending on strawberry juiciness.
  4. Cool and Chill: Cool completely on a wire rack (1-2 hours). Chill in the refrigerator for at least 2 hours for clean slicing.
  5. Serve: Cut into 16 squares. Optionally, dust with powdered sugar. Serve chilled or at room temperature.
