Parmesan Roasted Carrot Fries (30-Minute Snack!)

Sweet roasted carrot fries with crispy Parmesan coating—healthy, flavorful snack or side in 30 minutes!

  • 2 pounds carrots, peeled and sliced into ¼-inch thick “fries”
  • 1 tablespoon oil
  • Salt and pepper, to taste
  • ½ cup Parmigiano Reggiano (Parmesan cheese), grated

Instructions

  1. Preheat oven to 425°F (220°C). Line baking sheet with parchment paper or silicone mat.
  2. Toss carrot fries with 1 tablespoon oil, salt, and pepper in large bowl.
  3. Sprinkle grated Parmesan over carrots and toss to coat evenly.
  4. Spread in single layer on baking sheet.
  5. Roast 16–20 minutes, stirring halfway, until tender and lightly charred.
  6. Serve hot with favorite dip or as side

Notes

  • Use mandolin for uniform slices.
  • Option: Add ¼ tsp garlic powder or paprika.
  • Serve with chipotle mayo, ranch, or hummus.
  • Garnish with fresh parsley if desired.
  • Air fryer: 375°F for 10–15 min, shake halfway.
