Lemon Coconut Bread

An easy-to-make quick bread with lemon and coconut in a creamy frosting! Perfect for breakfast, brunch, or dessert.

For the bread:

  • 1/2 cup melted coconut oil (or oil, or melted butter)
  • 3/4 cup coconut sugar (or granulated sugar)
  • 3 large eggs
  • 1/2 cup coconut Greek yogurt
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 teaspoon coconut extract (optional)
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sweetened shredded coconut

For the frosting:

  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, room temperature
  • 1 cup icing/powdered/confectioners sugar
  • 1/2 tablespoon lemon zest
  • 1/4 teaspoon coconut extract (optional)
  • 1/2 cup sweetened shredded coconut

Instructions

  1. For the bread:
  2. In a large bowl, whisk 1/2 cup melted coconut oil, 3/4 cup coconut sugar, 3 large eggs, 1/2 cup coconut Greek yogurt, 1/2 teaspoon vanilla extract (if using), 1/2 teaspoon coconut extract (if using), 1 tablespoon lemon zest, and 2 tablespoons lemon juice until smooth.
  3. In a separate bowl, whisk 2 cups all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in 1 cup sweetened shredded coconut.
  5. Pour batter into a greased 9×5 inch loaf pan. Bake in a preheated 350°F (180°C) oven for 60 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting:
  8. Mix 4 ounces softened cream cheese, 1/4 cup room-temperature unsalted butter, 1 cup icing sugar, 1/2 tablespoon lemon zest, and 1/4 teaspoon coconut extract (if using) until smooth.
  9. Spread frosting over the cooled loaf and sprinkle with 1/2 cup sweetened shredded coconut. Let set before slicing.

Notes

  • Add more icing sugar to the frosting to make it thicker.
  • Option: Fold in 1/2 cup white chocolate chips with the coconut.
  • My favorite for brunch gatherings—always a hit with its tropical vibe!
