  • 2 yellow peaches, pitted and sliced

Peach Glaze:

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Chicken:

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. In a medium bowl, mix peach glaze ingredients: peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, pepper, and red pepper flakes. Set aside.
  2. Pat chicken thighs dry. Mix salt, black pepper, and chili powder in a small bowl; season chicken.
  3. Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Cook chicken 5 minutes per side until 165°F (74°C). Remove to a plate; tent with foil.
  4. In the same skillet, cook jalapeno slices for 3 minutes over medium heat. Add peaches; cook 3 minutes until softened.
  5. Pour glaze into skillet, stirring to coat peaches and jalapenos.
  6. Return chicken to skillet, spoon glaze over, and cook 1-2 minutes until heated through.
  7. Serve warm, topped with peaches and jalapenos.
