Homemade Italian Dressing

Salad Dressing

An easy and tasty homemade Italian style salad dressing, ready in just 5 minutes!

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 2 teaspoons Dijon mustard (optional)
  • 1 teaspoon honey (or sugar) (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon powdered garlic
  • 1/2 teaspoon powdered onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons Parmigiano Reggiano (Parmesan cheese), grated (optional)

Instructions

  • Step 1: Combine Ingredients In a small bowl or mason jar, add 1/2 cup extra virgin olive oil, 1/2 cup red wine vinegar, 2 teaspoons Dijon mustard (if using), 1 teaspoon honey (if using), 1 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/2 teaspoon dried parsley, 1/2 teaspoon powdered garlic, 1/2 teaspoon powdered onion, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon red pepper flakes (if using), and 2 tablespoons grated Parmigiano Reggiano (if using).
  • Step 2: Mix Well
  • Bowl Method: Whisk vigorously with a fork or whisk for about 30 seconds until the ingredients are fully combined and emulsified.

  • Jar Method: Seal the jar tightly and shake vigorously for 30 seconds to blend the ingredients thoroughly.

  • Step 3: Taste the dressing and adjust the oil-to-vinegar ratio, salt, or sweetness to your preference. For a milder flavor, add more olive oil; for extra tang, increase the vinegar.
  • Step 4: Transfer to an airtight container or keep in the mason jar. Refrigerate and use within a week, shaking well before each use to recombine the ingredients.

 

Notes

  • Adjust the oil-to-vinegar ratio to taste (1:1 for acidic, 2:1 for milder).
  • Dijon mustard aids emulsification but can be omitted.
  • Store in a sealed container in the fridge for up to a week; shake before use.
  • Variations: Use white wine vinegar, lemon juice, Italian seasoning, pecorino, roasted red bell pepper, sundried tomatoes, fennel seeds, mayonnaise, fresh garlic, or fresh parsley.
