Cheddar Rosemary Irish Soda Bread

A super simple Irish style soda bread with plenty of cheddar cheese and rosemary where you literally just need to mix 6 simple ingredients, form a loaf with the dough and bake it!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 cups cheddar cheese, shredded or diced
  • 2 tablespoons rosemary, chopped

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk flour, baking soda, and salt.
  3. Add buttermilk and mix until just combined.
  4. Fold in cheddar cheese and rosemary.
  5. Turn dough onto a floured surface, knead lightly, and shape into a 6-7 inch round loaf.
  6. Place on a parchment-lined baking sheet or preheated baking stone.
  7. Bake for 20-30 minutes until golden brown and hollow-sounding when tapped.
  8. Cool on a wire rack for 10 minutes before slicing.

Notes

  • Replace up to 1 cup all-purpose flour with whole wheat flour for a nuttier flavor.
  • Sprinkle extra cheese on top before baking for a cheesy crust.
  • Store at room temperature for 3 days, refrigerate for 5 days, or freeze for 1 month.
