A quick, easy, and tasty homemade Greek style salad dressing, ready in just 5 minutes!

Ingredients

  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice (~1 lemon)
  • 2 teaspoons Dijon mustard (optional)
  • 2 cloves garlic, minced or grated

  • 1/2 teaspoon pepper

Instructions

  • Step 1: In a small bowl or mason jar, add 1/2 cup extra virgin olive oil, 1/4 cup red wine vinegar, 1/4 cup fresh lemon juice, 2 teaspoons Dijon mustard (if using), 2 cloves minced or grated garlic, 2 teaspoons oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Step 2: Mix Thoroughly

Bowl Method: Whisk vigorously with a fork or whisk for about 30 seconds until the ingredients are fully combined and the dressing is emulsified, creating a cohesive, slightly thickened texture.

Jar Method: Seal the jar tightly and shake vigorously for 30 seconds to blend the ingredients thoroughly, ensuring an even distribution of flavors.

  • Step 3: Taste the dressing and adjust the balance as needed. For a sharper flavor, add more lemon juice or vinegar; for a milder taste, increase the olive oil. If you prefer a touch of sweetness, stir in a teaspoon of honey.
  • Step 4: Transfer the dressing to an airtight container or keep it in the mason jar. Refrigerate for up to one week, shaking well before each use to recombine the ingredients.
