  • 2 tablespoons oil (vegetable or coconut)
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 tablespoon vanilla extract (optional)
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 7oz (200g) dark chocolate chunks or chips (optional)

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. In a large bowl, mix 1 cup melted butter, 2 tablespoons oil, 1 cup sugar, and 1 cup packed brown sugar until smooth.
  3. Beat in 4 large eggs one at a time, then add 1 tablespoon vanilla extract if using.
  4. In a separate bowl, whisk 1 cup all-purpose flour, 1 cup unsweetened cocoa powder, and 1/2 teaspoon salt.
  5. Gradually add dry ingredients to wet mixture, stirring until just combined.
  6. Fold in 7oz dark chocolate chunks or chips.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 18-22 minutes, until the top is set but the center jiggles slightly. A toothpick should have moist crumbs.
  9. Cool in the pan for 30 minutes before slicing.

  • For fudgy texture, a toothpick inserted in the center should come out with moist crumbs.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for 1 week.
