Vegan Creamed Spinach (Dairy-Free!)

Make creamy, delicious Creamed Spinach in 15 minutes! This classic side dish is perfect for any meal, from weeknights to holidays.

  • 1 Tablespoon butter
  • 1/2 small onion, diced
  • 2 cloves garlic, smashed and sliced
  • 3/4 cup whole milk
  • 12 Tablespoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 ounces cream cheese
  • 2 Tablespoons Parmesan cheese
  • 12 ounces spinach, washed and dried

Instructions

  1. In a large skillet, melt 1 Tablespoon butter over medium heat. Add 1/2 small diced onion and cook, stirring often, until translucent, about 3 minutes. Add 2 cloves sliced garlic and cook 2 minutes, stirring frequently.
  2. Heat 3/4 cup whole milk in a microwave for 25 seconds; whisk in 1-2 Tablespoons cornstarch. Pour into skillet.
  3. Add 1 teaspoon salt, 1 teaspoon black pepper, 2 ounces cream cheese, and 2 Tablespoons Parmesan cheese; whisk until smooth.
  4. Stir in 12 ounces spinach, coating completely in the sauce. Cook 2-3 minutes until wilted. Serve warm.

Notes

  • Use frozen spinach by thawing and squeezing out liquid before adding in step 4.
  • Add red pepper flakes for a spicy kick.
  • For vegan version, use vegan butter, plant-based milk, vegan cream cheese, and nutritional yeast.
