Chicken Barbacoa

Best Chicken Barbacoa Recipe (Easy!)

Tender, smoky chipotle-spiced shredded chicken. 10 min prep, slow cooker does the rest—perfect for tacos, bowls, or burritos!

Ingredients

  • 1 lb boneless skinless chicken thighs (or breast)
  • 1 small onion, sliced or diced
  • 2 cloves garlic, chopped
  • 2 tsp ground cumin
  • 1 tsp oregano
  • ½ cup chicken broth
  • 2 chipotle chilis in adobo, chopped (+ 12 Tbsp sauce)
  • 1 Tbsp lime juice
  • 1 Tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp ground cloves
  • 2 bay leaves

Instructions

  1. Place chicken and onion in slow cooker.
  2. Mix garlic, cumin, oregano, broth, chipotles + sauce, lime juice, vinegar, salt, pepper, cloves, bay leaves.
  3. Pour over chicken.
  4. Cook on LOW for 8 hours or HIGH for 3–4 hours, until chicken reaches 165°F (74°C) and shreds easily.
  5. Shred chicken in the sauce, stir to coat. Optional: broil on baking sheet 2–3 min for crispy edges.
  6. Serve in tacos, bowls, or burritos!

Notes

  • Milder: 1 chipotle + no sauce.
  • Beef swap: 2 lbs chuck roast, low 8–10 hrs.
  • Gluten-free: naturally GF.
  • Freezes up to 3 months.
