Sparkling Champagne Jello Shots Recipe | Easy Party Delight

For the Jello Shots:

  • 2 tablespoons lemon juice
  • 1 ½ cups prosecco or champagne
  • ½ cup white sugar
  • 1 tablespoon + 2 teaspoons unflavored gelatin
  • ⅓ cup vodka
  • Edible gold glitter or gold sprinkles (optional)

Instructions

  • Grease a loaf pan with non-stick cooking spray and set aside.
  • In a medium saucepan, combine lemon juice, 1 cup of prosecco, and white sugar. Mix until combined.
  • Sprinkle the gelatin evenly over the mixture and let it sit for 2–3 minutes to bloom.
  • Turn the heat to low and stir occasionally for 3–4 minutes until the gelatin is fully dissolved.
  • Remove from heat and let the mixture cool completely in the refrigerator for 10–15 minutes.
  • Stir in the vodka and remaining ½ cup of prosecco.
  • Pour the mixture into the prepared loaf pan.
  • Refrigerate for at least 4 hours or overnight until the mixture sets.
  • Once set, run a knife along the edges of the pan and flip it upside down onto a cutting board.
  • Slice into 18 squares and garnish with edible gold glitter or sprinkles.

Notes

  • Use non-alcoholic sparkling juice as a substitute for champagne to make a family-friendly version.
  • Avoid boiling the gelatin mixture, as it may lose its ability to set properly.
  • Store the jello shots in the refrigerator for up to 3 days in an airtight container.
